I am the worse when it comes to waking up to prepare my food for the day. So for the next few weeks, I am going to try this whole meal prep thing. Today I tried to work with the food that I have in my fridge. So here goes...
1... Baby carrots and hummus.
2...Canned salmon (just like canned tuna) with onions and relish.
3... Shredded chicken (I had a rotisserie chicken from Costco, shredded that baby up and used that) and a pickle. Mama loves her pickles.
4... Quinoa premade from Costco.
5... Salad... Lettuce, onions, and for some reason I threw my laughing cow cheese in there. I chop it up like any other cheese in a salad.
6... 2 boiled eggs. Great protein source as a snack or breakfast with a side of fruit.
7... Oikos yogurt. A great go to breakfast. I love mixing it with granola or oatmeal to change the texture.
I guess time (and the scales) will tell just how much of a success this is!!
